Origin

Highland gardens, and the backbone of Dianhong

Fengqing, Lincang · Yunnan

Fengqing sits above the Lancang River in Yunnan, where tea grows at 1,600 metres and higher. Heavy mist and wide day–night temperature swings slow the plants down, so the leaves build more flavour.

One bud and two leaves are picked, then withered, rolled, fermented and dried, before sorting and grading. That is what “Dianhong Gongfu” means.

01

Withering

Fresh leaves are spread out to lose some moisture and become soft.

02

Rolling

The leaves are rolled to release juice and tighten into strips.

03

Fermentation

Tea polyphenols oxidise; the liquor turns red and the aroma forms.

04

Drying & sorting

Heat locks in the aroma, then the leaves are graded by strip and bud.

Selection

Three teas, three ways to drink them

All three come from the same Fengqing gardens; the difference is the picking standard and the age of the trees.

Brewing

Three steps to a good cup

Plain · 3 minutes
01

Water at 90–95 °C

Boil, then let it sit for a moment. Water that is too hot pulls out bitterness.

02

3–5 g of tea

For 200 ml of water. Want it stronger? Add a gram — there is no rule.

03

Steep 3–5 minutes

Three minutes for the first infusion, a little longer for each one after.

In the Gulf: it is often brewed strong with sugar and cardamom as karak chai. Milk and mint work just as well.
